Roasted Red Pepper & Chicken Pizza

Jarred roasted red peppers are one of my favorite “cheat” ingredients. They have such incredible flavor and require ZERO EFFORT, especially with this chicken pizza. I love it.

Today, I puréed some of those jarred roasted red peppers with a few other delicious ingredients into a yummy sauce that I smothered all over pizza dough and then topped with juicy chicken, baby arugula, and two cheeses! Are you ready for this roasted red pepper & chicken pizza???

INGREDIENTS

  • 1 lb of your favorite pizza dough
  • ¾ cup cooked and shredded chicken breast
  • 1 cup baby arugula
  • 7-8 oz mini mozzarella balls drained (I used the Ciliegine kind)
  • 2 oz crumbled goat cheese
  • Freshly minced basil for serving

Roasted Red Pepper Sauce:

  • 1 (12oz) jar roasted red peppers, drained
  • 2 tbsps cup plain Greek yogurt
  • 1 tbsp extra virgin olive oil
  • 4 garlic cloves
  • 1 tsp paprika
  • ½ tsp ground cumin
  • healthy pinch of salt and pepper

How to Make Roasted Red Pepper & Chicken Pizza

Step 1:

Preheat the oven to 425°F. Coat a baking sheet with cooking spray.

Step 2:

Combine all the roasted red pepper sauce ingredients in a small food processor or blender, then pulse until smooth.

Step 3:

Roll/stretch the pizza dough out on the prepared baking sheet into a 12-inch circle.

Step 4:

Spread the roasted red pepper sauce over the dough and top with chicken, arugula, mozzarella, and goat cheese.

Step 5:

Bake the pizza in the oven until the crust is golden and the cheese is melted, 20-25 minutes.

Step 6:

Sprinkle freshly minced basil over the top, then serve!

WHAT TO EAT WITH THIS ROASTED RED PEPPER & CHICKEN PIZZA

When I make Roasted Red Pepper & Chicken Pizza, I love adding a few extra things to enjoy with it. I like serving a fresh green salad with a light vinaigrette.

Sometimes, I make garlic bread or cheesy breadsticks too. I enjoy some roasted veggies, like zucchini or asparagus. And of course, I love to blend a Strawberry Mango Pineapple Smoothie to go with the perfect match for the pizza.
