Jarred roasted red peppers are one of my favorite “cheat” ingredients. They have such incredible flavor and require ZERO EFFORT. I love it.
Today, I puréed up some of those jarred roasted red peppers with a few other delicious ingredients into a yummy sauce that I smothered all over pizza dough then topped with juicy chicken, baby arugula, and two cheeses! You ready for this roasted red pepper & chicken pizza???
Roasted red pepper & chicken pizza recipe:

Ingredients
- 1 lb of your favorite pizza dough
- ¾ cup cooked and shredded chicken breast
- 1 cup baby arugula
- 7-8 oz mini mozzarella balls drained (I used the Ciliegine kind)
- 2 oz crumbled goat cheese
- freshly minced basil for serving
roasted red pepper sauce:
- 1 (12oz) jar roasted red peppers, drained
- 2 tbsps cup plain greek yogurt
- 1 tbsp extra virgin olive oil
- 4 garlic cloves
- 1 tsp paprika
- ½ tsp ground cumin
- healthy pinch salt and pepper
Instructions
- Preheat the oven to 425F. Coat a baking sheet with cooking spray.
- Combine all the roasted red pepper sauce ingredients in a small food processor or blender then pulse until smooth.
- Roll/stretch the pizza dough out on the prepared baking sheet into a 12-inch circle.
- Spread the roasted red pepper sauce over the dough and top with chicken, arugula, mozzarella and goat cheese.
- Bake the pizza in the oven until the crust is golden and the cheese is melted, 20-25 minutes.
- Sprinkle freshly minced basil over top then serve!
