Cauliflower White Bean Burgers

Experimenting with new and different combinations of veggie burgers is one of my favorite things to do! These cauliflower white bean burgers are probably my favorite version to date. Stuffed with cauliflower rice, smashed white beans, quinoa, mozzarella, and more, they are jam-packed with flavor and yumminess. Check out the recipe below!

Cauliflower White Bean Burgers

INGREDIENTS

  • 1 1/2 cups cooked quinoa
  • 10 oz bag frozen cauliflower rice cooked according to package instructions
  • 1 (15 oz) can white beans; drained, rinsed, and mashed
  • 2 tablespoons olive oil divided
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • healthy pinch of salt and pepper
  • 1 cup panko breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 3 eggs
  • Burger buns or English muffins for serving
  • burger toppings: lettuce, tomatoes, onions, sour cream, avocado slices for serving

How to Make Cauliflower White Bean Burgers

Step 1:

Cook the quinoa according to package instructions. Cook frozen cauliflower rice according to package instructions.

Step 2:

Combine the cooked quinoa, cooked cauliflower rice, mashed white beans, one tablespoon olive oil, cumin, garlic powder, cayenne pepper, salt, pepper, breadcrumbs, mozzarella, and eggs in a large bowl. Once mixed well, form the mixture into 8 large patties.

Step 3:

Heat the remaining tablespoon of olive oil in a large, nonstick skillet over medium-low heat. Once the oil is hot, add the patties. Cook on each side for about 5-7 minutes or until golden and crispy (you’ll likely need to cook these in two rounds, depending on how big your pan is).

Step 4:

Enjoy burgers on English muffins or burger buns with toppings of choice!

WHAT TO EAT WITH THIS CAULIFLOWER WHITE BEAN BURGER

The first time I made Cauliflower White Bean Burgers, I wasn’t expecting my kids to be into them, because cauliflower hasn’t exactly been their best friend. But something about that crispy edge and the soft bun magic worked.

My youngest said, “It tastes like fun!” which is the highest praise you can get when feeding a kid. We served them alongside Easy Tomato Orzo and Turkey Goat Cheese Meatballs for the non-vegan half of the table, and it was such a cozy balance of veggie-rich and hearty all at once.

For sides and pairings, I love adding Sweet Potato Wedges with Smoked Paprika, and for dessert, Cinnamon Peanut Butter Chocolate Chip Scones. Because after all those veggies, we all deserve something sweet.
