I loooooooove a good veggie burger.
Experimenting with new and different combination of veggie burger is one of my favorite things to do! These cauliflower white bean burgers are probably my most favorite version to date. Stuffed with cauliflower rice, smashed white beans, quinoa, mozzarella and more, they are jam packed with flavor and yumminess. Check out the recipe below!
cauliflower white bean burgers
Ingredients
- 1 1/2 cups cooked quinoa
- 10 oz bag frozen cauliflower rice cooked according to package instructions
- 1 (15 oz) can white beans; drained, rinsed, and mashed
- 2 tbsps olive oil divided
- 1 tsp cumin
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- healthy pinch salt and pepper
- 1 cup panko breadcrumbs
- 1 cup shredded mozzarella cheese
- 3 eggs
- burger buns or english muffins for serving
- burger toppings: lettuce, tomatoes, onions, sour cream, avocado slices for serving
Instructions
- Cook the quinoa according to package instructions. Cook frozen cauliflower rice according to package instructions.
Combine the cooked quinoa, cooked cauliflower rice, mashed white beans, one tablespoon olive oil, cumin, garlic powder, cayenne pepper, salt, pepper, breadcrumbs, mozzarella, and eggs in a large bowl. Once mixed well, form the mixture into 8 large patties.
- Heat remaining tablespoon of olive oil in a large, nonstick skillet over medium-low heat. Once oil is hot, add the patties. Cook on each side for about 5-7 minutes or until golden and crispy (you’ll likely need to cook these in two rounds depending on how big your pan is).
Enjoy burgers on english muffins or burger buns with toppings of choice!
