Wonton Nacho Cups
I made these deliciously crunchy wonton nacho cups and DID A PODCAST INTERVIEW. I was terrified at first (regarding the podcast, not making wonton nacho cups)… I was like, who the heck wants to listen to me?!?! BUT this amazing podcast is all about people who found their life’s passion and made careers out of it.

Okay, now on to these delicious wonton nacho cups!!!! We’ve got wonton wrappers instead of chips… they give off the same crunchy vibe BUT are easier to mold into an adorable cup that holds refried beans, taco meat, crushed lime tortilla chips, and all the shredded Mexican cheese.
Sounds amazing, right?! Top these bad boys off with a dollop of sour cream, a little salsa, and a sprinkle of cilantro, and you’ve got nachos in a cute appetizer form that everyone (literally everyone) will LOVE. I took these to my neighborhood block party this past Sunday, and they got devoured.
INGREDIENTS
- 2 lbs lean ground beef
- 2 oz taco seasoning mix
- 1/2 cup water
- 2 (12oz) packages of wonton wrappers
- 2 (16oz) cans refried beans
- 1 cup crushed lime tortilla chips
- 2 cups shredded Mexican cheese
- toppings: sour cream, salsa, cilantro

DIRECTIONS
Step 1:
Preheat the oven to 375°F. Coat a muffin tin with cooking spray.
Step 2:
In a large skillet over medium heat, brown the beef for about 8-10 minutes, breaking it into small bits with a wooden spoon. Next, add the taco seasoning and water, then simmer for 4-5 minutes.
Step 3:
Place one wonton wrapper at the bottom of each muffin cup. Top with about one tablespoon of refried beans, a sprinkle of crushed tortilla chips, one tablespoon of taco meat, and a sprinkle of shredded cheese. Repeat with a second wonton wrapper, refried beans, tortilla chips, taco meat, and cheese.
Step 4:
Bake in the oven for 15-18 minutes or until cheese is melted and wonton edges are golden. Remove from heat, repeat with remaining ingredients. Top baked wonton nacho cups with sour cream, salsa, and cilantro, then enjoy!
