I know what you’re thinking… ANOTHER sweet potato recipe? I know… I have a problem. BUT this recipe is seriously one of my favorites to date! These are the simplest most flavorful veggie burgers you’ll ever make! Who needs egg as a binding agent? We’ve got creamy sweet potato and sticky rice. Money.
I’m not going to go into the reasons why I love sweet potatoes for the 15 millionth time but I am going to talk about RICE. Wild and brown rice to be exact. Though before that, I need to share that one of my life goals is to be on Survivor. And before you ask:
- Yes, Survivor is still airing new seasons.
- And yes, I’m one of those weirdos that still watches it.
So why do I want to be on Survivor? Because it would be a BLAST, I love the beach, I think I’d be awesome at challenges and I love rice so much that I know I could survive on it for 39 days. I LIKE IT THAT MUCH.
In these burgers, we use brown and wild rice and none of that white rice crap. White rice is brown rice that has gone through a refining process and stripped of all its goodies like the side hulls and brans that contain wonderful things like proteins, thiamine, calcium, magnesium, fiber, and potassium. We want those things so brown rice it is! Wild rice, according to wiki, is actually four different species of grass plus the beneficial grain that can be harvested from them. Interesting huh? I thought so too. Oh and it has a chewy outer coat that contains the nutrient-dense grain inside!
So we have these two chewy, sticky rices smashed together with creamy sweet potato and crunchy panko plus all the spices like: cumin, sea salt, black pepper, garlic, cayenne, onion powder, and turmeric. Like I said guys, these burgers are vegan flavor central. Then you can dress them up with whichever toppings you choose! I topped mine with avocado slices, arugula, and tomato. It was superb (if I do say so myself).

Ingredients
- 1 cup wild rice
- 1 cup brown rice
- 3 tablespoons coconut oil, divided
- 2 large sweet potatoes, peeled and cut into large chunks
- 2 cups panko
- 2 tablespoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1/2 teaspoon turmeric
- 8 burger buns
- Toppings of choice: lettuce, tomato, onion, avocado, arugula, etc!
Instructions
- In a medium sauce pan, bring 4 cups of water, 1 tablespoon coconut oil, and a pinch of salt to a boil. Once boiling, stir in wild and brown rice. Bring mixture back to a boil, cover, reduce heat to low then cook for about 35 minutes (or until the rice has absorbed all the liquid).
- Bring another large pot of water to boil. Once boiling, add sweet potato chunks and cook for about 10 minutes (or until the sweet potato is easily pierce-able with a butter knife).
- Add cooked sweet potato chunks to a large bowl then mash using two forks. Using a wooden spoon, mix in cooked rice, panko, and all seasonings (cumin, salt, pepper, garlic, cayenne, onion powder, and turmeric) and stir until mixture is well combined.
- Form mixture into 8 equally sized patties. Heat a large nonstick skillet over medium, then add 1 tablespoon coconut oil. Once oil is melted and hot, add 4 patties to the skillet and cook 6-8 minutes on each side. Repeat with remaining 4 patties and tablespoon of coconut oil.
- Place your sweet potato rice patty on a bun, add desired toppings and top bun then EAT.

Basically, these sweet potato rice burgers are my new favorite go-to veggies burgers because they only have FOUR main ingredients (brown rice, wild rice, sweet potatoes and panko) and are super easy and simple to make. I consider adding the sweet potato to these burgers a “veggie burger hack” because it binds all the ingredients together while creating a moist and flavorful burger without eggs, liquids, or other binding agents. Yay!
