Nothing fancy here today…
Just some crazy rich and dense chocolate peanut oatmeal no bake cookies made vegan by using creamy coconut milk and coconut oil. Say whaaaa? Yes please!
We could be normal and use butter and milk BUT I’ve made no bake cookies the normal non-vegan way before and honestly… the coconut milk and coconut oil in these makes them richer and creamier. We also use EXTRA peanut butter because why not?! One should never skimp on the peanut butter. EVER.
Okay… so I SWEAR this is the last peanut butter recipe until after July. I have eleven recipes lined up that I’ve created and photographed and NONE of them contain peanut butter.

Back to no bake cookies… these cookies have some serious nostalgia for me! My older sister, Madeline, used to make them ALL THE TIME when we were kids. I used to beg her to make them for me when I was older because when I tried to make them myself, they never turned out as good. Obviously, that’s change now but I still love the memory behind these fabulously EASY delicious cookies.
Speaking of family, I got to see Madeline this weekend along with my almost one year old nephew and brother-in-law. It was such a wonderful weekend with family!!! They don’t live in Michigan so it’s really nice to get to see them at times other than the holidays. Saying goodbye yesterday morning was very sad! I mean look how FREAKING ADORABLE this kid is…
I may or may not have taken some almost one year old photos of Baby Reid but I don’t want to spoil my sister’s pictures so you only get a goofy outtake of him eating grass. I’M DEAD.
Recipe time!!!!!
No bake cookies will keep about one week in an airtight container in the fridge... if they last that long in your house.
Ingredients
- 3 1/2 cups old-fashioned oats (if gluten free, make sure the kind you buy is actually gluten free... not all old-fashioned oats are)
- 2 cups creamy peanut butter
- 1 tablespoon vanilla extract
- healthy pinch sea salt
- 2 cups white sugar (use bone char free sugar if vegan)
- 1/2 cup lite coconut milk (from the carton, not the can)
- 1/2 cup coconut oil
- 1/4 cup unsweetened 100% cocoa powder (if vegan or dairy free, make sure the kind you buy is actually vegan/dairy free... not all cocoa powders are)
Instructions
- Line two baking sheets or a large counter with wax paper (parchment will work as well).
- In a large bowl, combine oats, peanut butter, vanilla and sea salt. No need to stir yet, it will be almost impossible with the sticky peanut butter. Set aside.
- In a small sauce pan over medium heat, bring sugar, coconut milk, coconut oil, and cocoa to a boil, stirring occasionally. Let boil for one minute then remove from heat and pour over ingredients in large bowl from step two. Mix until well combined and the peanut butter has melted and is evenly distributed.
- Using a spoon, drop spoonfuls of no bake mixture on to the wax paper (mine were amount two tablespoons in size). Continue until all the mixture is gone then allow cookies to cool and harden at room temperature (about 30 minutes). THEN EAT.

If you’re using granulated white sugar for this recipe, then it’s no longer vegan (or vegetarian) as white sugar uses bone char in the refining process. There are some brands that specify ‘Bone Char Free’ so be careful what you buy. I prefer a recipe that uses maple syrup for sweetening.
