I have brought you the newest flavor of chicken salad sandwiches!!!!!! PLUS… I have a new food obsession… can you guess what it is?!

Y’all this stuff is amazing. I’d never really tasted it outside from hummus until a couple months ago. Like have you ever tried it alone or in a salad dressing?! SO FREAKING GOOD. It’s somewhat peanut butter-y (no wonder I love it) but not too sweet. According to the internet, tahini is sesame seed pasta. I do love the sesame seeds!
I’m going to be real for a second… as much as I love being all up beat Adrienne (my true self lol), I’ve been kind of down lately… I keep feeling like I’m not good enough and/or failing at all aspects of my life. I’m trying so hard to do SO MANY THINGS that sometimes I feel like I just stink at everything. At least that’s how I feel. Like right now, I’m writing this post at 2am Wednesday because I had to do 50 million other things this evening then got sidetracked trying to fix my blog’s index ability. Did I need to mess with that tonight? No… obviously. But I did because when things aren’t going right I like to look at the even longer list of things I didn’t do and freak out. But I’m here to say that I’m trying my best and I bet you are too! No one is perfect, no one’s life is perfect even though their Instagram feed may look that way. We are all stumbling through life and that’s OKAY. Just breathe homies.
I almost took that paragraph down this morning but I decided to keep it because I want to show that I’m a real person too, outside this weird blog world 🙂

I love a good chicken salad sandwich! It’s definitely something I gravitate toward on menus (that and BLTs…), which leads to me ordering them ALL THE TIME and trying so many versions… I think my fave is probably the version with walnuts and grapes, it’s just so refreshing! But my new fave are these quick and easy TAHINI chicken salad sandwiches! They kind of taste like a chicken salad sandwich and hummus had a baby, well… without the chickpeas 🙂

So yeah, the good ole’ chicken salad sandwich… in my opinion, it’s the PERFECT meal prep lunch option. Just make a bunch of this on Sunday, then make sandwiches for lunch throughout the week. Perfect right!? So much better than your plain Jane salad and veggies (you know that’s what’s in your meal prep box for lunch today). JUST SAYIN’
Ingredients
- 2 lbs cooked chicken breast, diced
- 1 cup chopped celery (4-5 stalks)
- 1 cup diced red pepper (about 1 pepper)
- 1 cup thinly sliced leeks (about 1 large leek)
- 1/2 cup sliced almonds
- 1/3 cup mayo (I used the reduced fat olive oil kind)
- 1/3 cup tahini
- 1 tablespoon olive oil
- 1/4 cup apple cider vinegar
- 3 tablespoons dijon mustard
- juice of one lemon
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon tagine spice
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- sandwich bread/rolls of choice
- optional sandwich toppings: baby spinach, tomato slices, avocado slices
Instructions
- Place diced chicken, celery, red pepper, leeks, and almonds in a large bowl. Combine mayo, tahini, olive oil, apple cider vinegar, dijon, and lemon juice in a large measuring cup then whisk to combine. Pour mayo tahini mixture over the chicken veggie mixture then stir to combine and coat all ingredients. Season with garlic powder, paprika, tagine, sea salt, and pepper. Stir to combine (again). Taste and adjust seasonings if needed.
- Assemble: Top your favorite sandwich bread or roll of choice with a large scoop of the tahini chicken salad then add toppings of choice like spinach, tomato slices, and avocado... ENJOY.
Notes
Feel free to serve this as is without bread. It tastes great with just a spoon too!
