Smoked Salmon Burgers
Let’s discuss these smoked salmon burgers. The smokey goodness of smoked salmon is one of my favorite flavors AND since they come in pre-smoked packages… it makes whipping up these burgers a breeeeeze. Also, we have many other delicious ingredients in there too, like:

- Baked russet potatoes: The cooked potato flesh is the PERFECT binding agent for all our other amazing ingredients to come. I like to cook mine quickly in the microwave rather than the oven.
- Minced apple: Weird right?! NO. The apple pieces create these little pockets of juicy goodness in the burgers, and it’s beyond wonderful.
- Steamed spinach: gotta get those greens!
- Sliced green onions >> always need a good onion element. I love onions!
- One egg, breadcrumbs, yogurt, spices: and other delicious and necessary items to help bind these burgers together and spice them up.
All of those yummy ingredients combined with smoked salmon chunks truly come together to form the moist, tasty, golden crispy burgers everrrr. Promise you won’t be bummed about these. Serve the smoked salmon burgers with brioche buns because those are the best buns, topped with arugula, mayo, mustard, or even some sriracha?!
INGREDIENTS
- 2 russet potatoes
- 1 large gala apple cored, seeded, and minced (preferably in a mini food processor)
- 1 10-oz box frozen spinach thawed
- 8 oz smoked salmon, roughly chopped
- 1 large egg
- 1/2 cup breadcrumbs
- 1 (5.3oz) container plain Greek yogurt
- 1/2 bunch green onions, thinly sliced
- Healthy pinch of salt and pepper
- cooking spray
- for serving: brioche burger buns, arugula, mayo, and/or dijon mustard

How to make Smoked Salmon Burgers?
Step 1:
Using a fork, poke holes around all sides of the russet potatoes. Place potatoes on a microwave safe plate then cook in the microwave on heat for about 15 minutes or until soft and cooked through.
Step 2:
Allow potatoes to cool slightly, then scoop out their flesh into a large mixing bowl. To the bowl, add the thawed spinach, smoked salmon, egg, breadcrumbs, Greek yogurt, green onions, and a healthy pinch of salt and pepper. Stir the mixture until everything is evenly incorporated. Form the mixture into 8 even-sized patties.
Step 3:
Coat a large nonstick skillet with cooking spray, then heat it over medium-low heat. Once the pan is hot, add the patties, then cook on each side for about 4-6 minutes or until golden and crispy. You’ll likely need to do this in two batches.
Step 4:
Place cooked burgers on the bottom half of the brioche bun, then top with arugula, mayo, and mustard, then the top half of the bun, and enjoy!

WHAT TO EAT WITH THESE SMOKED SALMON BURGERS?
These Smoked Salmon Burgers have quickly become a favorite in our house, especially when I realize I have everything I need already in the pantry.
I used some leftover whole wheat crackers instead of oats once, and it still turned out great! I served them with lemon dill yogurt sauce and a simple arugula salad.
For sides, I added Garlic Roasted Sweet Potato Wedges, Mediterranean Quinoa Salad, and a handful of pickled red onions.
The best part? We ended dinner with White Chocolate Dipped Vanilla Biscotti and hot tea while the kids colored at the table. What a summer meal.
