Pulled Pork, Veggie & Pineapple Rice Bowls
Tom smoked a 10lb pork shoulder like two weekends ago and we froze A LOT OF PULLED PORK. So this is me trying to come up with recipes to use all of it ha! These pulled pork, veggie & pineapple rice bowls are the perfect excuse to use some of that pork or for you to smoke your own pork butt or just throw one in the slow cooker and mix it together with yummy and nutrient-loaded brown rice, sautéed onions and sweet peppers, black beans, diced pineapple and avocado crema! You in?! GOOD.

You can use your favorite pulled pork (or chicken) recipe or any pre-made pulled pork (I think Costco and Kroger sell this)! This is a great simple slow cooker pulled pork recipe!
Ingredients
- 1 cup dry brown rice cooked according to package instructions
- 1-2 tbsps olive oil
- 3 garlic cloves minced
- 1 large sweet onion
- 10-12 mini sweet pepper tops removed, seeds/membranes remove, then thinly sliced into rings
- ½ tsp ground paprika
- healthy pinch salt and pepper
- 1 (15oz) can black beans drained and rinsed
- ¼ tsp chili powder
- 2-3 cups diced pineapple
- 2-3 cups cooked pulled pork**
- 2 green onions thinly sliced
Avocado Crema:
- 1 avocado flesh only
- ⅓ cup plain greek yogurt
- juice of two limes
- ¼ cup cilantro leaves
- 1 tsp honey
- healthy pinch salt and pepper

How to Make This Pulled Pork?
Step 1:
Cook rice according to package instructions.
Step 2:
Meanwhile, heat olive oil in a large skillet over medium heat. Once oil is hot, add the minced garlic, onions, sliced peppers, paprika, salt, and pepper. Toast to coat and mix everything together. Let cook until veggies are soft and fragrant, about 10-12 minutes, stirring occasionally.
Step 3:
Push veggie mixture to one side of the pan, then add the black beans and chili powder to the cleared area of the pan then mix and let cook until warmed through, about 5 minutes.
Step 4:
Meanwhile, add all the avocado crema ingredients to a mini food processor or blender then pulse until smooth.
Step 5:
Divide cooked brown rice, onion/pepper mixture, black beans, pulled pork, and diced pineapple between bowls. Top with avocado crema and a sprinkle of thinly sliced green onions then enjoy!

These Pulled Pork, Veggie & Pineapple Rice Bowls pair well with some tropical fruit salsa that contain mango and lime. I love it with some tortilla chips with guacamole or roasted sweet potatoes, for drinks, I always enjoy it with a cup of Strawberry Pineapple Smoothie, also a cold glass of pineapple iced tea or homemade lemonade is delicious to have.
