I think I’ve turned into a salad person. Quite shocking… I know!! But like this, prosciutto grapefruit salad is so worth it. When you top mixed greens with prosciutto, avocado, grapefruit, and goat cheese… It’s hard not to devour.

It’s funny though, grapefruit isn’t usually a fruit I lean towards… like if I’m going for fruit, I usually go berry, and even if I’m thinking citrus… I would definitely pick an orange over a grapefruit, BUT there’s just something about grapefruit’s sweet and bitter flavor that complements fatty and salty prosciutto SO WELL.

Try eating a wedge of grapefruit wrapped with prosciutto and you’ll see what I’m talking about! Anywho… next, we add avocado and goat cheese to add some creaminess to this fresh salad!

Finally, I added some roughly chopped pitted medjool dates for fun and a simple sesame oil grapefruit juice dressing, and it’s prosciutto grapefruit salad HEAVEN.

You interested? GOOD. One thing I should note about this salad, it’s DEFINITELY best enjoyed when prepared… I tried taking one of these salads tupperwareed-up (100% not a word) for lunch the next day, and it was pretty soggy… don’t do it. Plus, since this prosciutto grapefruit salad so freaking easy to make… just prep it for dinner or the morning of for lunch

INGRDIENTS

  • 2 large grapefruits
  • 1 tablespoon toasted sesame oil
  • healthy pinch of fine sea salt and black pepper
  • 6 cups of greens
  • 6 oz thinly sliced prosciutto, roughly torn
  • 2 ripe avocados; peeled, cored, and thinly sliced
  • 4 oz crumbled goat cheese
  • 8-10 pitted medjool dates, roughly chopped

How to make Prosciutto Grapefruit Salad

Step 1:

Using a knife, peel grapefruits, then squeeze peels over a large bowl, extracting about two tablespoons of grapefruit juice. Slice the grapefruit flesh into wedges, then set aside.

Step 2:

To the large bowl with the grapefruit juice, add sesame oil plus a healthy pinch of fine sea salt and pepper. Whisk to combine, then add greens and toss to coat.

Step 3:

Divide the dressed greens between four plates or low bowls. Top with equal amounts of grapefruit wedges, prosciutto pieces, avocado slices, goat cheese crumbles, and roughly chopped medjool dates, then ENJOY.
