This rum punch makes me want to be relaxing in a hut on a beach somewhere in the Caribbean looking out over the beautiful blue ocean…

So I know we just got back from vacation… but is it wrong to be dreaming about the next?!?! Well, if it is wrong, I don’t want to be right… Our last two big vacations have both been to Europe so I’m thinking the next should be somewhere tropical and relaxing like Costa Rica or Aruba or St. Lucia or Belize or Curaçao or Turks and Caicos or Dominican Republic… what tropical places have y’all been to?! Tell me your FAVORITES. I’ve already been to Mexico (though I still want to go to Cabo), the Bahamas, Costa Rica (but I’d go again for sure), Jamaica, and the Cayman Islands.
As much as I don’t like it, summer is still in full swing… I seriously cannot wait for fall (#favoriteseason #alltheboots #iwanttowearmyirishwoolscarfdangit)!!!!!!! Excuse my ridiculous hashtags… but while we are still in summer, this pineapple and mint rum punch is perfectly refreshing and boozy for warm summer nights (full of mosquitoes, mind you) outside grilling up a storm! It’s sweet but not too sweet, slightly minty (I’m not a fan of overly mint drinks aka I don’t like mojitos), extra rum-flavored (lol), and crazy refreshing! You could probably substitute the rum for vodka if you’re vodka person but I personally think the spiced rum makes this punch!
Let’s talk about the mint flavoring in the cocktail for a hot second. We are making our own homemade mint simple syrup!!! I just love this stuff. It’s so easy and simple to whip up plus it’s super awesome for adding to ice cream, coffee, cocktails, you name it! Tom loves loves loves adding a little of this homemade mint simple syrup to his cold brew especially on hot summer days. I’d recommend making a double batch of this syrup so you can make this pineapple and mint rum punch for your next summer party or BBQ and so you can add some mint flavor to your coffee! You won’t regret it.
Ingredients
- 3.5 cups pineapple juice
- 3 cups club soda
- 2 cups spiced rum
- 1 cup diced pineapple
- 1/2-3/4 cup mint simple syrup (ingredients and directions below)
- ice cubes
- garnish: extra pineapple wedges and mint leaves
- 3/4 cup water
- 3/4 cup granulated white sugar
- 1 bunch mint, few leaves removed for garnish
Instructions
- Make the mint simple syrup: Add water, sugar, and mint leaves to a small saucepan and bring to a boil over medium heat, whisking constantly to help the sugar dissolve. Let it simmer for about a minute then remove from heat and let it cool to room temp. Once cooled, strain out the mint leaves then use it in your rum punch, etc! If you’re not using it right away, leave the mint leaves with the syrup, transfer the mixture to a jar, then place it in the fridge until ready to use. Keeps sealed in the fridge for a week or so.
- In a large pitcher, combine pineapple juice, club soda, spiced rum, diced pineapple, and half of the mint syrup. Stir the mixture then taste to see if you want to add more mint. I added all the mint syrup but you do you. Fill rocks glasses with ice, top with rum punch then garnish with extra pineapple wedges and mint leaves. ENJOY.
