Piña colada popsicles = summer in popsicle form!
Even though it doesn’t feel like summer in Michigan anymore… seriously, this last week the weather has been amazing! Highs in the upper 60s, lows in the 40s/50s.
B-E-A-UTIFUL.
Though, I’m sure it will warm up again before the long fall/winter haul but it’s still kind of warm enough to eat popsicles, right? Well, I’m going for it… especially since they are boozy!!!
Piña coladas are totally one of my favorite tropical/fruity cocktails! I don’t drink them as often as I’d like though since it’s much easier to just crack open a bottle of wine or beer… But they are so fun, festive, and flavorful PLUS they make for one damn good popsicle flavor.
We start with all your standard piña colada ingredients like… rum, pineapple, coconut cream, agave, lime juice then blend them all up into a boozy smoothie essentially. Now, I don’t add as much rum as I would if I was making a piña colada cocktail because you really want these to freeze and if you have too much alcohol… well, you know how it goes (#chemistry). Any who, once everything is pureed up, we sprinkle some coconut flakes in the base of our popsicle molds (for garnish basically so if you don’t like the texture of coconut flakes, skip this part) then divide our piña colada puree evenly between the popsicle molds and freeze. SO easy and delicious! You could even skip the booze if you wanted to make these kid friendly but I don’t have children so YOLO.
Ready to party up the last days of summer with these easy-peasy-pineapple-squeezy piña colada popsicles?!

Ingredients
- 2 cups chopped pineapple
- 1/4 cup spiced rum
- 1 (14 oz) can coconut cream
- 1/4 cup agave
- juice of two limes
- optional garnish: coconut flakes
Instructions
- Place pineapple, rum, coconut cream, agave, and lime juice in a high-speed blender. Blend on high until completely smooth. Sprinkle some coconut flakes into the bottom of each popsicle mold (skip this step if you don't like the texture of coconut flakes). Divide pureed mixture between six popsicle molds, add popsicle sticks, then freeze until firm (about 4-6 hours). Once ready to eat, let the mold sit out at room temperature for about 10 minutes to thaw slightly or rinse the mold under hot water for several seconds to free the popsicles! ENJOY.
We made it to Friday again!!!!!!! WHEW. I need this weekend real bad. I’m so ready to chill all weekend long. Well, chill and babysit the cutest pugs ever!
