Mushroom & Prosciutto Gnocchi
I made this Mushroom & Prosciutto Gnocchi two nights ago, and though it might not look that cute, it was a one-pan flavor bomb of a dinner, so I decided that I obviously had to share it ASAP.
All you need is ONE oven-safe skillet plus butter, garlic, shallots (or an onion), diced prosciutto (or bacon), mushrooms, dried thyme, salt, pepper, one package of dry gnocchi, and balsamic vinegar. Ok, that seems like more stuff when I write it out, but I promise it’s not.
Like I’ve said now a few times… we take ONE skillet, then heat it over medium heat. We melt the butter, then add the shallots and garlic, then let them become extra fragrant best friends. Next, we add a new best friend, prosciutto, to the party because #ilovecuredmeats.
Then we add more best friends like spices, mushrooms, gnocchi, and balsamic vinegar, and toss everything together. Finally, we pop our ONE skillet in the oven for a few minutes, then BAM DINNER. You’re welcome. Real recipe below. Please read it, as this was really just a story about friends.

INGREDIENTS
- 4 tbsps butter
- 4 garlic cloves minced
- 2 medium shallots finely diced
- 4 oz prosciutto cubetti or diced pancetta can sub diced bacon
- 14 oz baby bella mushrooms
- 1 tsp dried thyme
- healthy pinch of salt and pepper
- 1 lb pre-packaged gnocchi
- 2 tbsps balsamic vinegar

How To Make Mushroom & Prosciutto Gnocchi
Step 1:
Preheat the oven to 400°F.
Step 2:
Heat butter in a large oven-safe skillet over medium heat. Once butter is melted, add your minced garlic and diced shallots. Stir to coat in butter, then saute until soft and fragrant, about 2-3 minutes, stirring often.
Step 3:
Add the prosciutto cubetti (or diced pancetta or bacon) to the skillet, then stir to coat and let cook for another 2-3 minutes.
Step 4:
Finally, stir in your mushrooms, thyme, salt, pepper, gnocchi, and balsamic vinegar, then toss to combine all ingredients. Cover your skillet, then let everything cook about 5-7 minutes, stirring occasionally.
Step 5:
Remove the lid and place the oven-safe skillet in the oven to cook for about 8 minutes or until gnocchi is soft and everything is extra fragrant.

What to Eat with This Mushroom & Prosciutto Gnocchi
When I was a little kid and refused to eat pretty much anything, prosciutto was one of the very few things I could literally eat by the package. Sauerkraut was another one. “You were not a normal kid, were you?” someone once joked. “Yeah, nah, I definitely wasn’t,” I laughed. I’ve had issues with food for as long as I can remember.
