Soooo yeahhhh…. these started out as yogurt popsicles for Memorial Day… they were going to be red, white, and blue but ended up as purple and pink. Ugh. But let’s embrace them for what they are… delicious purple and pink mixed berry yogurt popsicles because Adrienne didn’t do a good job separating the red and blue layers, whoops! And by blue layer… I mean the WAY purple-ish blue layer because blueberries blended with white yogurt yields a color that is prettttttty much totally purple and not blue.
Even though these mixed berry yogurt popsicles aren’t the colors they were supposed to be, they still TASTED wonderful and just how I planned: creamy, tangy, and slightly sweet. My colorful patriotic idea may have failed but the taste was on point, so I made them a second time as purple and pink mixed berry yogurt popsicles and the world didn’t end (it actually rejoiced). BUT since they didn’t turn out red, white, and blue, I figured I shouldn’t post them around Memorial Day or Fourth of July. So here we are, on some random day in June right before the official first day of Summer. Popsicles seem appropriate, wouldn’t you agree?

As you guys already know, we are going to Ireland in July but then we have a family reunion in Tennessee plus THREE weddings in August. It would be four weddings but two are on the same day and we can’t make both (insert very sad crying face here). I feel like our July and August months are always CRAZY. I swear I’m going to blink and it’s going to be September. Though, I prefer Fall… Summer is too hot… so I’m okay with it lol. I know I’m totally in the minority on that one. Everyone LOVES Summer but I kind of LOVE LOVE LOVE Fall and Winter. Yes, I love Winter. I lived most of my life in Florida, Louisiana, and Texas so I never had real Winters growing up. I also still have yet to shovel snow (thanks Tom) so Winter isn’t that bad 🙂
BUT IT’S ALMOST SUMMER. And I do like Summer too so let’s enjoy the almost official start of Summer with some should-have-been-red-white-and-blue-popsicles-that-are-now-purple-and-pink-mixed-berry-yogurt-popsicles. That sentence/phrase/word is clearly not grammatically correct but it’s fun and maybe effective at grabbing your attention?! Whatevs. Let’s dive into some mixed berry yogurt popsicles!
Ingredients
- 1 1/2 cups hulled strawberries
- 2 1/2 cups plain yogurt (I used the unsweetened coconut yogurt from So Delicious), divided
- 4 tablespoons honey, divided
- 2 teaspoons vanilla extract, divided
- 1 1/2 cups blueberries
- a popsicle mold + popsicle sticks
Instructions
- Strawberry layer: Combine hulled strawberries, 1 1/4 cups yogurt, 2 tablespoons honey, and 1 teaspoon vanilla to a blender. Pulse until only a few bits of strawberry remain. Fill six popsicle molds half way up with strawberry mixture. Freeze for 30 minutes.
- Blueberry layer: Combine blueberries, 1 1/4 cups yogurt, 2 tablespoons honey, and 1 teaspoon vanilla to a blender. Pulse until only a few bits of blueberry remain. Once the strawberry layer has firmed up, fill the six popsicle molds to the top with the blueberry mixture.
- FREEZE: Stick in popsicle sticks so that they pierce the strawberry layer and stay put. Freeze for about 4 hours. EAT EAT EAT.
Popsicles are messy. Scratch that… photographing popsicles is messy!
Off topic BUT I started listening to a new podcast yesterday… Up and Vanished… have y’all listened to this one yet?! I’m two episodes in and I LOVE IT. I really should be keeping podcasts that I want to listen to for our trip to Ireland but oh well I’m too invested now to stop lol.
OH and tomorrow I’m either going to post about swordfish sandwiches with sriracha mayo slaw OR pulled pork sheet pan nachos… which one do y’all want first?! One will be posted Wednesday and the other will go up Friday 🙂
