Back again with my favorite naan and another flatbread recipe >> kale & turkey bacon flatbread to be exact!
I can’t and won’t stop. If you guys haven’t tried these StoneFire Naan yet, you’re totally missing out! So what’s on our flatbread this time? Amazing things per usual, but let’s discuss…

Layer 1: The best naan ever from Stonefire, just so chewy yet crispy and everything good.
Layer 2: Marinara sauce AND tomato jam! Never tried tomato jam?! Well, it’s basically like sweeter, thicker, and more flavorful tomato sauce! I made some with fresh tomatoes from my neighbor Biz’s garden, but you can totally buy them at the store, too. You do you manage?
Layer 3: Diced and cooked turkey bacon! Now, here me out… I know real bacon is like totally the best, BUT in this case, on this flatbread, I’m really enjoying the flavor and texture of the turkey bacon. Feel free to use normal bacon or even diced prosciutto if you want! OH, and along with our bacon, we also have minced up kale that I also got from my neighbor Biz’s garden (she’s seriously the best and so generous with her tasty crops).
Layer 4: Cabot cheddar! Hear me out again… I know that cheddar isn’t necessarily the cheese you think of when you think of pizza or flatbread, but GUYS… the sharp flavor of this amazing cheddar pairs so so so nicely with the sweet tomato jam, and it’s literally HEAVEN in your mouth. TRUST ME.
Had you ever heard of Cabot Cheese before this? Well, if not, they are a cooperative owned by 800 farm families throughout New England & New York, and 100% of profits go back to the farmers, I just love that part!
All their cheddars are 100% naturally lactose-free (this blew my mind), aged, and gluten-free! Also, in addition to a full line of cheeses, Cabot makes Greek yogurt, sour cream, cottage cheese, and butter!
SO we’ve got carbs, vegetables, protein, and cheese… sounds like the perfect family-friendly meal to me! Recipe time >> kale & turkey bacon flatbread here we come!

How to make Kale & Turkey Bacon Flatbread
Step 1:
Preheat your oven to 350°F. Line two baking sheets with parchment paper.
Step 2:
Cook your turkey bacon: Heat a large nonstick skillet over medium heat. Add the diced turkey bacon, then cook, stirring often, until slightly crispy (about 6-8 minutes).
Step 3:
Place two flatbreads on each baking sheet. Using a pastry brush, brush the flatbreads with olive oil, then sprinkle them with garlic powder, salt, and pepper.
Step 4:
Top each flatbread with about 2 tablespoons of marinara and 2 tablespoons of tomato jam (leaving an inch of sauce free as the crust), a handful of chopped kale, a handful of turkey bacon, and finally, a large sprinkle of shredded cheddar.
Step 5:
Place flatbreads in the oven to bake for about 20 minutes or until the crust is golden and the cheese is melted.
Step 6:
Remove flatbreads from the oven, sprinkle with Italian seasoning, then slice and serve!

WHAT TO EAT WITH THIS KALE & TURKEY BACON FLATBREAD
Dinner last night was a total win with this Kale & Turkey Bacon Flatbread, honestly, I just used what we had in the fridge, and somehow it turned into a nice pizza night.
My kids were surprised at first (greens on pizza?!), but once they tasted the crispy turkey bacon with the cheese and tomato sauce, they were hooked.
I used a simple canned tomato, nothing special, but it worked very well and saved the night. For our next pizza night, I’m thinking of trying Halloumi & Roasted Veg Tacos again; those are one of my family’s favorites around here.
And for something sweet? The Cinnamon Peanut Butter Chocolate Chip Scones are always a hit for Saturday breakfast. And as a nice suggestion from me, I recommend this quick and easy dessert Grilled Fruit Kabobs, a friend of mine gave me the recipe and honestly I didn’t regret
