Easy Taco Cauliflower Chicken Bake Recipe
The best and easiest weeknight meal loaded with all the veggies and protein… taco cauliflower chicken bake for the win! We’ve got shredded chicken breast, cauliflower, zucchini, black beans, tomatoes, garlic, and so many spices all tossed together, then topped with cheese and baked to perfection! You ready?! GOOD because this bake is damn delicious and healthy

INGREDIENTS
- 1 ½ lbs cooked and shredded chicken breast
- 1 medium head of cauliflower, sliced into mini florets
- 3 zucchini diced
- 2 (15oz) cans black beans, drained and rinsed
- 2 (15oz) cans diced tomatoes
- 4 garlic cloves minced
- 1 tbsp olive oil
- 1 tbsp chili powder
- 2 tsps ground cumin
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- Healthy pinch of Himalayan salt and black pepper
- 2 cups shredded pepper jack cheese
- for serving: sour cream, avocado, freshly minced cilantro, and/or lime wedges

How To Make Taco Cauliflower Chicken Bake
Step 1:
Preheat your oven to 400°F. Coat a 9×13 baking dish with cooking spray.
Step 2:
Combine cooked and shredded chicken with all other ingredients EXCEPT for the shredded pepper jack cheese and the “for serving” ingredients in an extra large bowl then toss to combine.
Step 3:
Transfer contents of the bowl to the prepared baking dish, then top with the shredded pepper jack. Bake in the oven for about 30-40 minutes or until the cheese is melted and golden.
Step 4:
Serve with sour cream, diced avocado, minced cilantro, and/or lime wedges!

WHAT TO EAT WITH THIS TACO CAULIFLOWER CHICKEN BAKE
When I made this Taco Cauliflower Chicken Bake last week, I was reminded of the time my husband’s coworker brought in tacos for the whole office. That small kindness stuck with my husband, especially since my own family hadn’t even thought to do that.
