Ahhhh the good ole’ BLT… such a classic sandwich that almost never disappoints (except when the bacon isn’t crispy…. that’s a sin).
Bacon. Lettuce. Tomato.
Three things I love very much that taste so perfect together. Crispy and fatty bacon with juicy tomato and crunchy lettuce… whoever thought of this combination is a genius! I seriously order a BLT when I go out to eat for brunch/lunch like 50% of the time. I’m also obsessed with the BLAT (bacon, lettuce, avocado, and tomato) but that’s a topic for another day. Today we are discussing (and hopefully eating) BLT shooters!!!
So what’s a BLT shooter? No it’s not someone who shoots a BLT… it’s a BLT in appetizer form served on endive leaves! The endive leaves serve as “shooters” or vehicles to shovel B and T into your mouth.
Let me lay it out for you… We have B (bacon) and T (cherry tomatoes mixed in a simple vinaigrette) served on top of L (endive leaves) with cream cheese. Ummm hello deliciousness?! Also, these are pretty much the cutest and most colorful appetizer in the whole world. A+ for presentation and flavor!
Did I mention that they are also stupid easy to make?! No? Well they are! You can put these bad boys together in less than 20 minutes with only 8 ingredients. Boom, awesome.
Let’s get recipe-ing:
Ingredients
- 6 slices thick-cut bacon, cooked (crispy) and crumbled
- 1 1/2 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon apple cider vinegar
- healthy pinch sea salt and pepper
- 3 heads of endive (about 16 leaves)
- 6 oz chive and onion cream cheese, room temp
Instructions
- Cook your bacon (how to here)! Make sure it's crispy but not burnt then crumble it into small pieces. Set aside.
- In a small bowl, mix together halved cherry tomatoes, olive oil, apple cider vinegar, sea salt, and pepper until well combined.
- Arrange 16 endive leaves on large platter. Scoop cream cheese into piping bag (or sandwich-size ziploc). Cut off the end of the piping bag leaving a 3/4-inch opening (or cut off one corner of the ziploc bag) then pipe about one tablespoon of cream cheese onto the middle of each endive leaf.
- Evenly divide cherry tomato mixture among endive leaves (place spoonful of mixture on top of the cream cheese) then top with a sprinkle of crispy crumbled bacon.
- DEVOUR.
Notes
Can be served immediately or refrigerated up to 4 hours until ready to serve.
