Bacon and bourbon are favorites in our household… Have you noticed?!
It’s pretty obvious. But I mean… who doesn’t love bourbon and bacon?! Sober vegetarians I guess? Hmm…
OH also, I’m currently obsessed with peaches… they are SO JUICY AND GOOD. Seriously, the other day I came home from work and while I was working dinner… I consumed three peaches!!
Three peaches in like 10 minutes… gimme all the peaches. Plus I made a rosé peach cocktail last weekend that is peach-a-licious too! I also just realized it’s almost the same ingredients as my strawberry peach frosé without being blended. Whoops! Apparently, I love this peach strawberry rosé combo!
p.s. that recipe is coming tomorrow for a special last Saturday of summer cocktail edition blog post!
SO do you know what’s even better than peaches, bourbon, bacon alone?
Combining them ALL TOGETHER in a fabulously juicy and crispy and glaze-y appetizer!
You saw that coming huh? You’re so smart.
Bacon wrapped peaches topped with bourbon fig glaze. WHaaaa? Drool sauce. Bacon wrapped peaches… that part is easy. You just uh slice the bacon strips in half then wrap them around peach slices and secure them with a toothpick. There’s also a sage leaf between the bacon and peach for EXTRA flavorrrr. Easy peasy peachy!
Let’s get to the “fancy” part though… bourbon fig glaze. Really NOT that fancy, it just sounds fancy.
Story time: One of my good friends, Jeremy, used to work at Zingerman’s mail order and would gift me all the delicious goodies that they sell. A year or two ago, he gave me a bottle of their fig molasses, which seriously had me puzzled of what to do with it for a long time. BUT once I saw these bacon wrapped peaches, I KNEW that I had to add bourbon to the fig molasses then reduce it down to an amazing bourbon fig glaze.
GUYS!!! IT WAS SO GOOD.
Seriously, the flavor profile with bacon, peaches, sage, and bourbon fig glaze is UNREAL. Juicy, fatty, crispy, earthy, sweet, and tangy. ALL THE GOOD THINGS.
Now, I realize that fig molasses is a pretty random ingredient BUT if you don’t feel like ordering from Zingerman’s (though I think you should), you could totally try to use fig syrup or fig jam then add a little (tablespoon-ish?) molasses plus the bourbon then reduce that down to a glaze. As an alternative, I would recommend a balsamic glaze to go over these bacon wrapped peaches.
Recipe thymmmeeee.
Ingredients
- 4 large ripe peaches, pitted and sliced into 8 pieces each (yielding 32 slices total)
- 12 oz center cut bacon, sliced in half
- 16 large sage leaves (from one 2 oz package), torn in half
- olive oil
- bourbon fig glaze (directions and ingredients below)
- 1/2 cup fig molasses
- 2 tablespoons bourbon
Instructions
- Preheat oven to 400F. Line a baking sheet with parchment paper.
- Place a torn sage leaf on one side of a peach then wrap a bacon half slice around the two and secure with a toothpick. Continue until all the peaches with sage leaves are wrapped with bacon. Arrange bacon wrapped peaches on the parchment paper lined baking sheet, drizzle a little olive oil over top of them, then bake for 40 minutes (flipping over half way through).
- Make bourbon fig glaze: In a small saucepan over medium-high heat, combine fig molasses and bourbon. Cook for 5-7 minutes, whisking constantly, until reduced by half.
- Remove peaches from oven. Heat a grill pan over medium-high heat. Sear the peaches for about 3 minutes on both sides (or until grill marks appear). Place peaches on serving platter, drizzle bourbon fig glaze over top then serve!!
- Grilling option: Brush bacon wrapped peaches with olive oil then grill them for about 20 minutes over low heat.
