Long time no talk, guys! Sorry for being MIA for the past two, three, four weeks, but guess what?!

WE MOVED. OMG. And then one of my best friends got MARRIED! Plus, this weekend we are having some friends over to show them the new house, so we are full steam ahead on the yard work. On Tuesday night, we spent three hours weeding, mulching, and planting grass, ending by eating this yummy banana smoothie, then did another two hours last night!

Needless to say, it’s been a little hectic around these parts, BUT I’m back and ready to share some delicious food like this banana smoothie that I made in my NEW KITCHEN YAY.

Anywho, what’s up with you?! Anything new and exciting? Just enjoying summer? Love it.

Have you tried a banana smoothie bowl? I always thought these smoothie bowls had like a ton of ingredients, including milk, but then I started researching them and really all you need is some frozen fruit, nut butter, and water! Simple enough, right? I decided to make mine a mixed berry banana smoothie bowl because that’s what I had on hand!

The base of the bowl is easy: blend together frozen fruit, peanut butter, and water until smooth! If you’re feeling frisky, you can throw in some chia seeds or maca for some extra awesome health benefits, but simple is great too!

The fun part comes in with the toppings… like fresh kiwi, more banana, toasted coconut flakes, and more mixed berries! Recipe is below, not like you need it, but just in case!

INGREDIENTS

  • 2 frozen peeled bananas (~8oz), broken into fourths
  • 3 cups frozen mixed berries (~12oz)
  • 1/2 cup peanut butter
  • 1/2-1 cup water
  • 1 tablespoon maca (optional)
  • 1 tablespoon chia seeds (optional)
  • optional toppings: kiwi slices, more peanut butter, banana slices, toasted coconut flakes, berries, a drizzle of honey, etc!

How to make a Mixed Berry Banana Smoothie Bowl

Step 1:

Place frozen banana pieces, frozen berries, peanut butter, and 1/2 cup water in a high-speed blender. Pulse until smooth, adding more water (one tablespoon at a time) if needed to keep the blender going. You may need to stop the blender and scrape down the sides/remix the ingredients as needed.

Step 2:

Once the mixture is completely smooth, divide between bowls and top with desired toppings like kiwi slices, banana slices, toasted coconut flakes, and berries, then ENJOY!

WHAT TO EAT WITH THIS MIXED BERRY BANANA SMOOTHIE BOWL

Mornings can be chaos in my house, but this Mixed Berry Banana Smoothie Bowl has been my secret weapon lately. I tossed in frozen blueberries, fresh berries, and a ripe banana.

Sometimes, I add the coconut water, then top it with whatever fruit I have left, like this time kiwi, or if you have pineapple as a decoration.

It was a refreshing filling. My kids even joined in and made their own versions (less fruit, more granola). Later that night, we balanced the health kick with Chickpea, Chorizo, & Corn Tacos, and always a family favorite.
