1.5lbsbrussels sproutsshredded (highly recommend using a food processor for this)
2applescored and diced
12ozdried cranberries
3/4cupchopped walnuts
8ozcrumbled goat cheese
for the dressing:
1/4cupextra virgin olive oil
2tbspsmaple syrup
2tbspsdijon mustard
2tbspswhite wine vinegar
juice of one lemon
1shallotminced
3garlic clovesminced
healthy pinch salt and pepperto taste
Instructions
Add shredded brussels sprouts, diced apples, dried cranberries, chopped walnuts, and crumbled goat cheese to a large bowl then toss to mix until all ingredients are evenly distributed.
Whisk together all dressing ingredients in a large measuring cup until completely incorporated and smooth.
Pour dressing over salad then toss to coat. Let rest about 20 minutes before serving. If not serving right away, wait to stir in the dressing until then.
