  • 12 oz dried cranberries
  • 3/4 cup chopped walnuts
  • 8 oz crumbled goat cheese

for the dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tbsps maple syrup
  • 2 tbsps dijon mustard
  • 2 tbsps white wine vinegar
  • juice of one lemon
  • 1 shallot minced
  • 3 garlic cloves minced
  • healthy pinch salt and pepper to taste

Instructions

  1. Add shredded brussels sprouts, diced apples, dried cranberries, chopped walnuts, and crumbled goat cheese to a large bowl then toss to mix until all ingredients are evenly distributed.
  2. Whisk together all dressing ingredients in a large measuring cup until completely incorporated and smooth.
  3. Pour dressing over salad then toss to coat. Let rest about 20 minutes before serving. If not serving right away, wait to stir in the dressing until then.
