beet & citrus salad

Ingredients

  • 1/4 cup olive oil
  • 2 tbsps balsamic vinegar
  • 2 tbsps maple syrup
  • 1 tbsp dijon mustard
  • 1 tsp garlic powder
  • healthy pinch salt and pepper
  • 1 6.5 oz precooked beets (I recommend the Love Beets brand) diced
  • 3 clementines peeled and broken into wedges
  • 1 5oz container spring mix greens
  • 4 oz crumbled feta cheese
  • 1/2 cup shelled pistachios

Instructions

  1. Whisk olive oil, balsamic vinegar, maple syrup, dijon, garlic powder, salt, and pepper in the bottom of a large bowl until smooth.
  2. Add diced beets, clementine wedges, greens, feta, and pistachios to the bowl then toss to coat.

  3. Divide between bowls and enjoy!
