mediterranean flatbreads

Ingredients

  • 1 lb boneless, skinless chicken breast; cooked and shredded (can totally omit if vegetarian)
  • 4 naan flatbreads (Stonefire are the best)
  • 1 (12oz) container of tzatziki
  • 1-2 cups baby spinach leaves
  • 1 (12oz) jar roasted red peppers, drained and thinly sliced
  • 1 (6.5oz) container of ready-to eat beets in vinegar, diced (I’m obsessed with Love Beets)
  • 4 oz crumbled feta or goat cheese
  • healthy pinch salt, pepper, and garlic powder

Instructions

  1. Cook the chicken your preferred method and shred it (or grab a rotisserie chicken from the store). I love throwing my chicken breasts in the instant pot then cover with water and cook on high pressure for 12ish minutes.
  2. Preheat your oven to 350F. Line two baking sheets with parchment paper.
  3. Place two flatbreads on each baking sheet.
  4. Top each flatbread with about 3 tablespoons of tzatziki (leaving an inch tzatziki free as the crust), a few spinach leaves, 1/4 lb shredded chicken, roasted red pepper slices, diced beets, crumbled feta or goat cheese and a healthy pinch of salt, pepper, and garlic powder.

  5. Place flatbreads in the oven to bake for about 20 minutes or until the crust is golden and cheese is melted.
  6. Remove flatbreads from the oven then slice and serve!
