  • 10 oz bag frozen cauliflower rice cooked according to package instructions
  • 1 (15 oz) can white beans; drained, rinsed, and mashed
  • 2 tbsps olive oil divided

  • healthy pinch salt and pepper
  • 1 cup panko breadcrumbs

  • 3 eggs
  • burger buns or english muffins for serving
  • burger toppings: lettuce, tomatoes, onions, sour cream, avocado slices for serving

Instructions

  1. Cook the quinoa according to package instructions. Cook frozen cauliflower rice according to package instructions.
  2. Combine the cooked quinoa, cooked cauliflower rice, mashed white beans, one tablespoon olive oil, cumin, garlic powder, cayenne pepper, salt, pepper, breadcrumbs, mozzarella, and eggs in a large bowl. Once mixed well, form the mixture into 8 large patties.

  3. Heat remaining tablespoon of olive oil in a large, nonstick skillet over medium-low heat. Once oil is hot, add the patties. Cook on each side for about 5-7 minutes or until golden and crispy (you’ll likely need to cook these in two rounds depending on how big your pan is).
