KALE GREEK SALAD

Ingredients

  • 10 oz baby kale, roughly chopped
  • 1 english cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 small red onion, diced
  • 1 (15oz) can quartered artichoke hearts, drained
  • 1 (15oz) can chickpeas, drained
  • 1 cup kalamata olives
  • 1 cup crumbled feta cheese

homemade greek salad dressing (yields 2 cups)

  • 1/2 cup olive oil
  • 2 tbsps apple cider vinegar
  • 5 garlic cloves
  • 1 tsp dried oregano
  • 1 tbsp chopped fresh dill
  • healthy pinch sea salt and black pepper
  • 1 cup crumbled feta cheese
  • 1 cup buttermilk

Instructions

  1. Make your dressing: In a blender or food processor, combine dressing ingredients then pulse until completely smooth.

  2. Combine kale through feta in a large bowl then toss to combine. Add greek dressing then gently toss salad again.
