peanut butter chip bourbon blondies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons cream of tartar
  • 1 cup brown butter*
  • 2 cups white sugar
  • 2 large eggs, room temp
  • 1 teaspoon vanilla extract
  • 3 tablespoons bourbon
  • 1 bag (10oz) peanut butter chips
  • 2 tablespoons coarse sugar
  • cooking spray

Instructions

  1. Preheat oven to 350F. Line a 9x9 baking tin with parchment paper then spray with cooking spray.
  2. In a medium bowl, whisk together flour, salt, and cream of tartar until well combined.
  3. In a stand mixer fitted with the paddle attachment, cream together brown butter and sugar on high for 1 minute Next, add in the eggs, vanilla, and bourbon then mix until well incorporated, about 1 minute.

  4. Fold flour mixture into butter/sugar/bourbon mixture then mix until well combined. Scoop batter into prepared baking tin then sprinkle coarse sugar over top.
  5. Bake for 40-45 minutes! Blondies are ready once golden brown or when a knife inserted into the center comes out pretty much clean. Allow blondies to cool completely before cutting into squares then enjoy!
