STONE FRUIT GALETTE

Ingredients

  • 8 peaches, pitted and chopped (about 2-3 cups)
  • cup melted honey
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons vanilla extract
  • a sprinkle of flour
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg, beaten
  • coarse sugar, for sprinkling!

Instructions

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together chopped peaches, honey, cornstarch, lemon juice, and vanilla extract until well combined and peaches are coated.
  3. On a lightly floured work surface, roll the puff pastry out using a rolling pin into a rectangle about ¼-inch thick. Place the rolled out puff pastry onto the parchment lined baking sheet. Pour the coated peaches in the middle of the pastry sheet, leaving about a 1-inch border. Fold the edges of the puff pastry up and over the peaches. Brush the edges of the puff pastry with the beaten egg and sprinkle with coarse sugar. Bake at 375F for 25-30 minutes or until golden brown!
