Using a knife, peel grapefruits then squeeze peels over a large bowl, extracting about two tablespoons of grapefruit juice. Slice grapefruit flesh into wedges then set aside.
To the large bowl with the grapefruit juice, add sesame oil plus a healthy pinch of fine sea salt and pepper. Whisk to combine then add greens and toss to coat.
Divide the dressed greens between four plates or low bowls. Top with equal amounts of grapefruit wedges, prosciutto pieces, avocado slices, goat cheese crumbles, and roughly chopped medjool dates then ENJOY.
