oatmeal chocolate peanut butter bars

Ingredients

  • 1 cup unsalted butter
  • 2/3 cup packed dark brown sugar
  • 3 1/3 cups old fashioned oats
  • 1 cup dark chocolate chips
  • 2/3 cup peanut butter
  • healthy pinch or two of flakey sea salt

Instructions

  1. Line an 8×8 (inch) baking dish with parchment paper.
  2. Melt butter and brown sugar in a medium saucepan over medium heat, whisking until the sugar dissolves. Cook until mixture is bubbling then let it simmer for two minutes. Remove from the heat then stir in oats until completely combined.
  3. Place dark chocolate chips in a microwave-safe bowl then melt in the microwave according to package instructions. Once melted, stir in peanut butter until completely combined and smooth.
  4. Press half of the oat/sugar mixture into the prepared baking dish. Spread the melted chocolate/peanut butter mixture over top using a rubber spatula. Gently press the remaining oat/sugar mixture over top then sprinkle with flakey sea salt. Let cool completely at room temp or refrigerate for a couple hours before slicing!
