chocolate dunked coconut cookies

Ingredients

  • 1/2 cup coconut sugar
  • 1/2 cup coconut oil, melted
  • 2 cups unsweetened shredded coconut
  • 1 cup coconut flour
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 cup coconut milk
  • 8 ounces dark chocolate, melted according to package instructions

Instructions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. Combine coconut sugar through milk in a medium bowl. Mix using a rubber spatula or wooden spoon until completely incorporated. Scoop out golf ball-ish sized balls of “batter” then place them on the parchment paper-lined baking sheet (should yield about 36 cookies). Using your fingers, press the balls down to slightly flatten the cookies. Bake for 12-15 minutes or until golden. Let cookies cool completely then dunk or drizzle with melted dark chocolate!
