Ingredients

  • 1 lb boneless skinless chicken breast
  • 6 stalks celery diced
  • 1 red onion diced
  • 1 red bell pepper; cored seeded, and diced
  • 1 bunch green onions thinly sliced
  • 1 cup small curd cottage cheese
  • 6 oz plain greek yogurt
  • juice of one lemon
  • 1 tbsp dijon mustard
  • 1 tbsps olive oil
  • 1/2 bunch fresh parsley minced
  • healthy pinch salt and pepper
  • whole wheat wraps for serving optional

Instructions

  1. Cook your chicken: OPTION 1) In an instant pot with 1 cup chicken broth, seal, and cook for 10-12 minutes then shred OR OPTION 2) Preheat the oven to 400F. Add chicken to a baking dish, drizzle with olive oil then bake for 20-30 minutes, or until cooked through, then shred.
  2. Combine cooked and shredded chicken with ALL OTHER ingredients in a large bowl then toss until well combined.
  3. Serve plain (bowl + fork) or in a whole wheat wrap!
