Add maple syrup, soy sauce, cornstarch, sesame oil, ground ginger, garlic powder, salt, and pepper to a large ziploc bag the shack to mix up. Add steak strips to the bag then shake again to coat the steak. Let marinate in the fridge for at least 30 minutes.
Cook rice according to package instructions.
Heat a large skillet over medium heat. Once the pan is hot, add the contents of the ziploc bag. Cook steak for a few minutes on each side then remove from the skillet while the middle is still slightly pink.
While the pan is still hot, add the green onions, coleslaw mixture, and red bell pepper then saute until veggies are soft, about 8 minutes, stirring occasionally. Add cooked steak & rice back to the skillet then mix and remove pan from heat and serve!
