asian mango chicken kebabs

Ingredients

for the chicken:

  • 1 ½ lbs chicken breast sliced into 1-inch chunks
  • ¼ cup soy sauce
  • 2 tbsps lime juice
  • 1 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 1-2 tsps sriracha
  • 1 tsp garlic powder
  • ½ tsp dried ground ginger

for everything else:

  • wooden or metal kebab skewers
  • 3 mangoes peeled, pitted, and sliced into ½ inch chunks
  • 2 bell peppers cored, seeded, and cut into ½-1 inch chunks
  • 1 red onion sliced into 1-inch chunks
  • sweet chili garlic sauce and freshly minced cilantro for serving

Instructions

  1. Combine all “for the chicken '' ingredients in a large ziploc bag then shake to coat and place in the fridge to marinate for at least 30 minutes. Also, if using wooden skewers, start soaking them now.
  2. Heat your grill to medium-high heat (400/450F-ish).
  3. Once the chicken is done marinating, thread the skewers with a piece of chicken, a piece of mango, 1-2 pieces of bell pepper, and a chunk of onion then repeat until all ingredients are skewered up.
  4. Place kabobs directly on the hot grill then cook for 5-7 minutes per side or until chicken is fully cooked. Alternatively, you could place all the ingredients on a baking sheet and roast in the oven at 400F for 20-30 minutes.
  5. Drizzle a little sweet chili garlic sauce over top of the grilled kebabs along with a sprinkle of freshly minced cilantro then enjoy!
