Preheat the oven to 400F. Line a baking sheet with parchment paper.
Lay flatbread on the prepared baking sheet. Spread with apricot jam all over the flatbread, leaving a ½ inch border with no jam as crust. Top jam with peach slices then diced pancetta then mozzarella slices. Finally, sprinkle dried thyme, salt, and pepper over top then finish it off with a drizzle of honey.
Bake in the oven until crust is golden and the cheese is melted, about 10 minutes then slice and serve!
