sun-dried tomato pesto chicken pasta salad

Ingredients

  • 12 oz orecchiette noodles cooked according to package instructions
  • 12 oz boneless skinless chicken breast; cooked and diced
  • 12 oz center cut bacon cooked and crumbled
  • 1 (15oz) can corn drained
  • 1 )6.7oz) container sun-dried tomato pesto
  • 4 oz crumbled goat cheese
  • ½ cup grated parmesan
  • ¼ cup olive oil
  • 1 lemon zested and juiced
  • 1 tbsp honey
  • 1 tsp dried basil
  • healthy pinch salt and pepper

Instructions

  1. Cook pasta noodles according to package instructions then drain. Cook your chicken then dice it into ½ inch pieces. Fry your bacon until crispy then crumble it with your hands into little pieces.
  2. Combine cooked/drained pasta, cooked/diced chicken, and cooked/crumbled bacon along with all remaining ingredients in a large bowl then toss to coat and mix everything together then serve!
