mediterranean baked potatoes

Ingredients

  • 3 large russet potatoes
  • 2 tbsps olive oil
  • healthy pinch of salt and pepper x 2
  • 1 (10oz) package chopped frozen spinach steamed according to package instructions
  • ½ cup prepared tzatziki sauce + more for serving
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 6 oz crumbled feta divided
  • 1 cup cherry tomatoes diced
  • 1 cup pitted kalamata olives roughly chopped
  • freshly minced parsley

Instructions

  1. Preheat the oven to 400F. Line a baking sheet with parchment paper.
  2. Pierce potatoes all over using a fork then coat them in olive oil, salt, and pepper. Place potatoes on the prepared baking sheet then roast in the oven until insides are cooked and soft and outsides are crispy, about 60-75 minutes, rotating halfway through. Allow potatoes to cool slightly so you are able to handle them.
  3. Slice potatoes in half then scoop out most of the inside flesh and place it in a medium bowl. Place skins back on the baking sheet as a holding area.
  4. Add steamed chopped spinach, ½ cup tzatziki sauce, sour cream, garlic powder, dried oregano, and half the crumbled feta to the bowl with the cooked potato flesh then mix everything up using a rubber spatula until it’s nice and creamy.
  5. Scoop the spinach/potato flesh mixture from step 4 back into the potato skins from step 3 then top them with diced tomatoes, chopped olives, the remaining crumbled feta, a sprinkle of freshly minced parsley, plus a drizzle of extra tzatziki and enjoy!
