Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add your shredded jackfruit, puréed chipotle peppers, salsa, chili powder, cumin, and a healthy pinch salt, pepper, and garlic powder. Toss to coat and mix everything together then let cook until the sauce coats the jackfruit and everything is hot, about 10 minutes, stirring occasionally.
Meanwhile, preheat the oven to 425F and coat a 9x13 baking dish with cooking spray. Also meanwhile, combine all the cilantro lime avocado crema ingredients in a mini food processor or blender then pulse until smooth.
Once the jackfruit is done, set up your taquito making station: place tortillas on a cutting board with the jackfruit, avocado crema, shredded cheese, and the prepared baking dish nearby. Fill each tortilla with a dollop of avocado crema then a handful of shredded chipotle jackfruit then a sprinkle of cheese then roll it up and place in the prepared 9x13 baking dish. Repeat with remaining ingredients.
