baked chipotle jackfruit taquitos

Ingredients

for the chipotle jackfruit:

  • 2 (20oz) cans young jackfruit in brine or water, drained and shredded
  • 2-3 chipotle peppers in adobo sauce puréed in mini food processor until smooth
  • 2 tbsps olive oil
  • ¼ cup salsa preferably thin and not chunky
  • 1 tbsp chili powder
  • 2 tsps ground cumin
  • healthy pinch salt, pepper, and garlic powder

for the cilantro lime avocado crema:

  • 1 large avocado or two small
  • cup plain greek yogurt
  • ¼ cup fresh cilantro leaves
  • 2 tbsps lime juice
  • healthy pinch salt and pepper

for everything else:

  • 2 cups shredded cheddar
  • 16 medium size tortillas
  • toppings: sour cream, pico de gallo, freshly minced cilantro

Instructions

  1. Shred your drained jackfruit in a bowl using two forks or in a stand mixer with the paddle attachment. Pureé your chipotle peppers in a mini food processor if you haven’t done so already.
  2. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add your shredded jackfruit, puréed chipotle peppers, salsa, chili powder, cumin, and a healthy pinch salt, pepper, and garlic powder. Toss to coat and mix everything together then let cook until the sauce coats the jackfruit and everything is hot, about 10 minutes, stirring occasionally.

  3. Meanwhile, preheat the oven to 425F and coat a 9x13 baking dish with cooking spray. Also meanwhile, combine all the cilantro lime avocado crema ingredients in a mini food processor or blender then pulse until smooth.

  4. Once the jackfruit is done, set up your taquito making station: place tortillas on a cutting board with the jackfruit, avocado crema, shredded cheese, and the prepared baking dish nearby. Fill each tortilla with a dollop of avocado crema then a handful of shredded chipotle jackfruit then a sprinkle of cheese then roll it up and place in the prepared 9x13 baking dish. Repeat with remaining ingredients.

  5. Bake taquitos in the oven until golden and slightly crispy, about 13-18 minutes.
  6. Top with sour cream, pico de gallo, and a sprinkle of freshly minced cilantro and enjoy!
