taco cauliflower chicken bake

Ingredients

  • 1 ½ lbs cooked and shredded chicken breast
  • 1 medium head cauliflower sliced into mini florets
  • 3 zucchini diced
  • 2 (15oz) cans black beans drained and rinsed
  • 2 (15oz) cans diced tomatoes
  • 4 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 2 tsps ground cumin
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • healthy pinch of himalayan salt and black pepper
  • 2 cups shredded pepper jack cheese
  • for serving: sour cream, avocado, freshly minced cilantro, and/or lime wedges

Instructions

  1. Preheat your oven to 400F. Coat a 9x13 baking dish with cooking spray.
  2. Combine cooked and shredded chicken with all other ingredients EXCEPT for the shredded pepper jack cheese and the “for serving” ingredients in an extra large bowl then toss to combine.
  3. Transfer contents of the bowl to the prepared baking dish then top with the shredded pepper jack. Bake in the oven for about 30-40 minutes or until the cheese is melted and golden.
  4. Serve with sour cream, diced avocado, minced cilantro, and/or lime wedges!
