Ingredients

  • 2 cups strawberries hulled and halved
  • 1 cup granulated white sugar
  • ½ cup white wine vinegar
  • ½ cup red wine vinegar
  • 1 (0.5oz) package fresh basil sprigs

Instructions

  1. Sterilize a large jar (about a quart size) and lid with boiling water.

  2. Combine strawberries and sugar in the sterilized jar then mix and mash using a wooden spoon then cover with the lid and let sit for 24 hours at room temp.
  3. Add the vinegar and basil then cover again and let sit at room temp for 7 days,
  4. Strain mixture using a fine mesh colander into a bowl. Re-sterilize the jar/lid with boiling water then transfer the shrub back to the jar. Cover and refrigerate until you are ready to use :)
