turkey breast & bell pepper tacos

Ingredients

for the turkey & peppers:

  • 2 large yellow bell peppers cored, seeded, and sliced
  • 2-3 large shallots thinly sliced
  • 4 garlic cloves minced
  • 1 (24oz) package turkey breast tenderloins
  • 2 tbsps olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp dried oregano
  • healthy pinch sea salt and pepper

for avocado jalapeño lime sauce:

  • ½ large avocado flesh only
  • 1 jalapeño seeded and roughly chopped
  • ½ bunch cilantro leaves only
  • 2 tbsps olive oil
  • juice of one lime
  • healthy pinch sea salt and pepper

for serving:

  • 9-12 taco tortillas
  • 4 oz crumbled goat cheese
  • freshly minced cilantro

Instructions

  1. Preheat the oven to 400F.
  2. Toss together sliced bell peppers, shallots, and garlic in the bottom of a 9x13 baking dish. Place turkey breast tenderloins on top then drizzle everything with olive oil and spices then toss to coat everything. Place the dishin the oven to bake for about 35-45 minutes or until turkey insides are no longer pink. Once done, slice and dice the turkey into 1-inch chunks.
  3. Meanwhile, place all ingredients for the avocado jalapeño lime sauce in the bowl of a small food processor then pulse until smooth.

  4. When ready to eat, spread a small spoonful of avocado jalapeño lime sauce in each tortilla then top with turkey pieces, roasted bell peppers and shallots, then a sprinkle of crumbled goat cheese and freshly minced cilantro and enjoy!
