Bake cake according to box instructions. Allow to cool slightly.
Crumble cake into a large bowl then add in the cream cheese frosting then mix until well combined and smooth. Place the bowl in the fridge or freeze to chill.
Once the mixture is chilled, scoop it into 1-inch sized balls then place them on a parchment paper lined baking sheet. Place the baking sheet in the freezer to chill for about 45 minutes.
When your cake balls are almost done chilling, melt the white chocolate candy coating according to package instructions.
Coat each cake ball in white chocolate then place back on the baking sheet to harden. Repeat with remaining cake balls and candy coating. If you have any candy coating left over, drizzle it over the carrot cake ball tops for a fun decorative finish.
