roasted red pepper & chicken pizza

Ingredients

  • 1 lb of your favorite pizza dough
  • ¾ cup cooked and shredded chicken breast
  • 1 cup baby arugula
  • 7-8 oz mini mozzarella balls drained (I used the Ciliegine kind)
  • 2 oz crumbled goat cheese
  • freshly minced basil for serving

roasted red pepper sauce:

  • 1 (12oz) jar roasted red peppers, drained
  • 2 tbsps cup plain greek yogurt
  • 1 tbsp extra virgin olive oil
  • 4 garlic cloves
  • 1 tsp paprika
  • ½ tsp ground cumin
  • healthy pinch salt and pepper

Instructions

  1. Preheat the oven to 425F. Coat a baking sheet with cooking spray.
  2. Combine all the roasted red pepper sauce ingredients in a small food processor or blender then pulse until smooth.
  3. Roll/stretch the pizza dough out on the prepared baking sheet into a 12-inch circle.
  4. Spread the roasted red pepper sauce over the dough and top with chicken, arugula, mozzarella and goat cheese.
  5. Bake the pizza in the oven until the crust is golden and the cheese is melted, 20-25 minutes.
  6. Sprinkle freshly minced basil over top then serve!
