cauliflower tots

Ingredients

  • 2 cups steamed cauliflower minced or finely chopped*
  • 1 large egg
  • 1 large egg white
  • 1/2 cup onion minced
  • 3 tbsp fresh minced flat parsley
  • 1/2 cup reduced fat shredded Italian cheese
  • 3/4 cup breadcrumbs + some to sprinkle
  • salt, pepper & garlic powder
  • cooking spray

Instructions

  1. Preheat oven to 400F.
  2. Prep the cauliflower: Cook the cauliflower using a steamer basket (about 8 minutes) or steam the cauliflower in about 1/4 inch of water in a large covered frying pan (about 5 minutes) - the cauliflower should be tender but not mushy. Then drain the cauliflower and pat dry with a paper towel. Mince or finely chop the steamed cauliflower (I used my food processor... easiest way to chop... #lazy)
  3. Mix all the ingredients together in a medium sized bowl. Season with salt, pepper & garlic powder (to taste). Scoop 1 tbsp of the mixture into you hands and roll into balls. Place balls onto greased baking sheet. Sprinkle a small amount of breadcrumbs over each ball. Bake for about 22-24 minutes or until golden.
