Preheat the oven to 400F. Line a baking sheet with parchment paper.
Spread out pizza dough on the prepared baking sheet, pushing it out using your fingers to about a 12x18 rectangle. Mist dough with olive oil spray then prebake in the oven according to your pizza dough’s instructions (mine was about 10 minutes) or until just starting to golden.
Meanwhile, melt the butter in a large skillet over medium heat. Once butter is melted, add sage leaves then let cook for about 30 second on one side, flip then cook for an additional 30 seconds or until crisp. Remove sage leaves using a slotted spoon.
Add minced garlic, mushrooms, and a healthy pinch of salt and pepper to the skillet still over medium heat. Toss to coat then let cook until garlic is fragrant and mushrooms are starting to soften, about 6 minutes. Remove skillet from heat.
Combine goat cheese and whipped cheese in a large measuring cup or bowl then mix together until smooth.
Spread soft cheese mixture over pizza crust leaving about a 1-inch edge cheese-less for crust. Top this with the mushroom mixture, sage leaves, shredded cheddar, a sprinkle of italian seasoning, a drizzle of honey, and finally some pine nuts.
Bake pizza in the oven until the cheese is melted, about 8-10 minutes, then slice and serve!
