It’s September so I’m allowed to post about pumpkin things right?! I hope so ha! Any who, I opened a can of pumpkin puree the other day at lunch to add some squash to Killian’s lunch quesadilla and instead of wasting basically a whole can of pumpkin puree by letting it sit in fridge for weeks with me forgetting about it… I decided to whip up a quick batch of these whole wheat chocolate chip pumpkin muffins! They are loaded with pumpkin (obvi), whole wheat flour, coconut oil, cinnamon, nutmeg, ginger, cloves, and dark chocolate chips…basically fall flavor heaven. You’re welcome!
Whole wheat chocolate chip pumpkin muffin recipe:

Ingredients
- ¾ cup pumpkin puree
- ½ cup packed brown sugar
- ¼ white granulated white sugar
- ½ cup melted coconut oil
- 2 large eggs at room temp
- 2 tsp vanilla extract
- 1 ⅓ cups whole wheat flour
- 1 tsp baking soda
- ¾ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp kosher salt
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp ground cloves
- 10 oz dark chocolate chips
- turbinado sugar for sprinkling
Instructions
- Preheat the oven to 425F. Coat a 12-cup muffin tin with cooking spray.
- In a large bowl, whisk together pumpkin puree, brown sugar, white sugar, melted coconut oil, eggs, and vanilla until smooth.
- Using a rubber spatula, fold in the flour, baking soda, baking powder, cinnamon, salt, nutmeg, ginger, and cloves until well combined.
- Finally, mix in the chocolate chips until evenly distributed.
- Scoop batter into muffin tin filling each hole only about 2/3rds full. Sprinkle tops of batter with turbinado sugar.
- Bake for 5 minutes at 425F. Reduce oven temp to 375F then cook for an additional 15-18 minutes or until tops are golden and a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool slightly then remove from muffin tin and enjoy!
