I don’t even have the words to describe how good these taco stuffed sweet potatoes were… like I don’t.

taco stuffed sweet potatoes
Ingredients
- 1 tbsp olive oil
- 1 medium sweet onion diced
- 1 lb lean ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1 cup chunky salsa
- 4 medium sweet potatoes
- 1/3 cup sour cream
- juice of one lime
- optional toppings: shredded cheese, diced tomato, diced avocado or guac, minced cilantro
Instructions
Heat oil olive in a large skillet over medium heat. Once oil is hot, add the diced onion and ground beef. Break up the beef using your cooking utensil then let cook until browned, about 8-10 minutes. Next, add the taco seasoning, water, and salsa to the skillet. Toss to incorporate spices then let cook for an additional few minutes. Remove from heat.
- While the beef is cooking, poke holes all around the sweet potatoes using a fork then cook in the microwave for 8-12 minutes, flipping over halfway through. If the sweet potatoes aren’t soft enough, continue cooking for an additional couple minutes. Allow to cool slightly then slice them lengthwise with a knife and fluff the insides with a fork.
- Make the lime sour cream: Combine sour cream and lime juice in a small bowl then whisk until smooth.
- Spoon the cooked taco meat into and over the sweet potatoes then top with desired toppings and a drizzle of lime sour cream.
