These sweet potato black bean chicken enchiladas are 100% the best enchiladas I’ve EVER had. I think it’s the combo of roasted soft and slightly caramelized sweet potatoes with zesty corn, black beans, and juicy chicken breast… OH and a bunch of cheese 🤩🤩 >>> yum yum yum.
It just hits all the right notes in flavor department. I honestly couldn’t shove them in my mouth fast enough and I’m 99% I ate more enchiladas then Tom that night… Killian also thoroughly enjoyed these bad boys!
I originally came up with this recipe to make for one of my besties that just had a baby. Enchiladas are a total comfort food that’s perfect for when you come home exhausted from the hospital with a new babe. Sooo I made her two pans of these amazing enchiladas and one for us! Win, win, win.
sweet potato black bean chicken enchiladas
Ingredients
- 2 medium sweet potatoes peeled and diced
- 2 tbsps olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- healthy pinch salt and pepper
- 2 cups cooked and shredded chicken breast
- 1 (15oz) can black beans drained and rinsed
- 1 (15oz) can sweet corn drained
- 2 cups shredded mexican cheese divided
- 1 (19oz) can enchilada sauce divided
- 16 soft taco medium tortillas not burrito or taco sized
- optional toppings: avocado slices, salsa/pico de gallo, minced cilantro and/or extra shredded cheese
for the avocado lime crema:
- 1/4 cup sour cream
- 1 ripe avocado
- 2 limes juiced
- 1/4 cup cilantro
- healthy pinch salt and pepper
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper. Coat a 9×13 baking dish with cooking spray.
- Arrange diced sweet potatoes on the prepared baking sheet then drizzle with oil, chili powder ground cumin, garlic powder, salt, and pepper. Toss to coat then bake until tender and golden, about 25-30 minutes.
- While the sweet potatoes are cooking, cook and shred your chicken! I love tossing a few chicken breasts in the Instant Pot then covering with water and pressure cooking them for like 10-12 minutes (or whatever the IP recommends) then shredding them. Super easy!! But you can make your chicken however you’d like >> rotisserie is great too!
- In a large bowl, toss together black beans, corn, 1 cup mexican cheese, 3/4 cup enchilada sauce, cooked sweet potato pieces, and shredded chicken then toss to mix and combine.
- Coat the bottom of the prepared baking dish with 1/2 cup enchilada sauce and spread it out evenly.
Layout one tortilla on a work surface, fill with 1/3 cup of filling mixture from the large bowl in step 4 then roll the tortilla up and place it seam side down in the prepared baking dish. Repeat with remaining tortillas and filling.
Top the dish with the remaining 1 cup of enchilada sauce and remaining 1 cup of shredded mexican cheese then bake for 20-25 minutes or until the sauce is bubbling and the cheese is melted.
- While the enchiladas cook, make your avocado lime crema: Combine crema ingredients in a small food processor or blender then pulse until smooth.
- Serve enchiladas with a drizzle of avocado lime crema, avocado slices, salsa, minced cilantro and/or extra cheese.
New Parent Dinner Delivery Tips
I’m at the age now where all my friends are having babies. Needless to say, I make a ton of “new parent dinners” because:
A) I clearly love to cook and my love language is gift giving.
B) New parents are often overwhelmed after bringing a new baby home from the hospital and thinking about dinner usually falls to the end of the list. I enjoy being there for my friends especially in the food department.
Over the years, I’ve gather a few of my favorite tips/tricks/advice for that essential New Parent Dinner Delivery so here goes nothing:
- IT NEEDS TO BE SIMPLE. Like completely hands-off. No chopping, prepping, mixing, or cooking allowed (other than reheating).
- With that… include instructions for reheating (if needed) so they don’t burn the dish.
- Make sure you follow any of their dietary restrictions. Wouldn’t you feel like an ass if you made something that they are allergic too??? Double check this before making something.
- Use pans they can throw out. I repeat: USE DISPOSABLE DISHES. No new parents wants or has the brain space to remember to wash and return your 9×13 baking dish Karen…
- Supply all the toppings/garnishes!
- INCLUDE ALCOHOL. I mean you don’t have to do this but I’ve found that it’s extra appreciated.
- Not totally necessary but I love to include a dish for now and one they can freeze and eat later! Again, include instructions for reheating the frozen meal if you do this.
- I also find it fun to include a sweet treat or dessert. I love making and giving friends these lactation cookies (who knows if they actually work but they are yummy even if they don’t lol).
- Last but not least… DO NOT OVER STAY YOUR WELCOME WHEN DELIVERING. This one is huge. Drop the food off, chat for a few minutes if they invite you in to talk but do not over stay (one beer max). These parents are exhausted and the mom likely needs to go breastfeed which she’s still figuring out how to do correctly without flashing your husband her boob. It’s just tough SO BE THOUGHTFUL OF THEIR TIME.
- Ok actually the last one, you don’t need to make fancy cards or anything… I’m just extra and had fun with this lol 😜
