Pasta salads are a staple summer side dish but I feel like sometimes they are kinda blah… but trust me when I tell you that this sun-dried tomato pesto chicken pasta salad is 100% not lacking in anything! It’s got so much flavor, fun pasta noodles, two proteins (chicken and bacon), corn, creamy goat cheese, just the right amount of spices, plus my favorite sun-dried tomato pesto from Aldi! Not to mention it whips together super quickly… recipe time!
Sun-dried tomato pesto chicken pasta salad recipe:

Ingredients
- 12 oz orecchiette noodles cooked according to package instructions
- 12 oz boneless skinless chicken breast; cooked and diced
- 12 oz center cut bacon cooked and crumbled
- 1 (15oz) can corn drained
- 1 )6.7oz) container sun-dried tomato pesto
- 4 oz crumbled goat cheese
- ½ cup grated parmesan
- ¼ cup olive oil
- 1 lemon zested and juiced
- 1 tbsp honey
- 1 tsp dried basil
- healthy pinch salt and pepper
Instructions
- Cook pasta noodles according to package instructions then drain. Cook your chicken then dice it into ½ inch pieces. Fry your bacon until crispy then crumble it with your hands into little pieces.
- Combine cooked/drained pasta, cooked/diced chicken, and cooked/crumbled bacon along with all remaining ingredients in a large bowl then toss to coat and mix everything together then serve!
