Summer meals should be quick, fresh, and in my opinion… loaded full of veggies >> just like this summer quinoa veggie salad! Jam-packed with quinoa, zucchini, bell peppers, tomatoes, onions, peas, and mozzarella balls plus a quick dressing, this salad comes together in no time and is extra fresh and delicious. I decided to pair mine with some super simple ground chicken meatballs and lemon yogurt sauce but you do you 😉
Summer quinoa veggie salad recipe:

Ingredients
- 1 cup dry quinoa cooked according to package instructions
- 2 medium zucchini finely diced
- 2 pints cherry tomatoes halved
- 2 yellow bell peppers cored, seeded, and finely diced
- 1 small red onion finely diced
- 1 (15oz) can green peas drained
- 2 (8oz) containers mozzarella balls halved
- 6 garlic cloves minced
- ¼ cup freshly minced parsley
- 3 tbsps extra virgin olive oil
- 2 tbsps balsamic vinegar
- 1 tbsp lemon juice
- 1 tbsp dijon mustard
- 1 tsp dried oregano
- healthy pinch salt and pepper
for the super simple ground chicken meatballs:
- 2 lbs lean ground chicken
- 2 large eggs
- 6 garlic cloves minced
- 2 tbsps olive oil
- 1 large avocado
- 2 shallots minced
- 2 tbsps minced cilantro
- 1 cup panko breadcrumbs
- healthy pinch salt and pepper
for the super simple lemon yogurt sauce:
- ¼ cup plain greek yogurt
- juice of one lemon
- ¼ tsp paprika
- healthy pinch salt and pepper
Instructions
- Cook the quinoa according to package instructions.
- Combine cooked quinoa and all other remaining ingredients in a large bowl then toss until well incorporated.
- If making the chicken meatballs, start this prep while the quinoa is cooking. Preheat your oven to 400F. Line a baking sheet with parchment paper. Combine all chicken meatball ingredients in a medium bowl then mix until well combined using a rubber spatula. Using a spoon or cookie scoop, make golf ball sized meatballs with the mixture and place them on the prepared baking sheet. Bake in the oven until golden and cooked through, about 18-22 minutes.
- While the meatballs are cooking, whisk together all the lemon yogurt sauce ingredients until smooth.
- Serve veggie quinoa salad with meatballs and yogurt sauce over top!
