So I failed…
Stone fruit isn’t really in season anymore because I procrastinated too long before posting this recipe… BUT good news is that you can really put almost ANY FRUIT in this galette and it will turn out super delicious! Apples, pears, cherries, blueberries, strawberries, raspberries, mixed berries, rhubarb >> should I continue?! Another neat thing about this recipe… it’s ridiculously simple >> all you need is your fruit of choice, honey, cornstarch, lemon juice, vanilla extract, puff pastry, an egg, and coarse sugar! I bet you even have most these ingredients on hand. Am I right?! I knew it.
Side note: Puff pastry is definitely one of my favorite recipe “hack” items! It’s perfect for in-a-pinch times when you need to make a savory tart for a party appetizer or fruit pop-tarts for breakfast (or an amazing galette for dessert tehehe). The hardest part about using puff pastry is remembering to thaw it about 30 minutes before you need to use it 😊

STONE FRUIT GALETTE
Ingredients
- 8 peaches, pitted and chopped (about 2-3 cups)
- ⅓ cup melted honey
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
- 2 teaspoons vanilla extract
- a sprinkle of flour
- 1 sheet frozen puff pastry, thawed
- 1 large egg, beaten
- coarse sugar, for sprinkling!
Instructions
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- In a large bowl, mix together chopped peaches, honey, cornstarch, lemon juice, and vanilla extract until well combined and peaches are coated.
- On a lightly floured work surface, roll the puff pastry out using a rolling pin into a rectangle about ¼-inch thick. Place the rolled out puff pastry onto the parchment lined baking sheet. Pour the coated peaches in the middle of the pastry sheet, leaving about a 1-inch border. Fold the edges of the puff pastry up and over the peaches. Brush the edges of the puff pastry with the beaten egg and sprinkle with coarse sugar. Bake at 375F for 25-30 minutes or until golden brown!

Tom and I were going to go as Tonya Harding and Jeff Gillooly (inspired by I, Tonya) but it’s simply too freaking cold to wear an ice skating outfit right now in Michigan SO we are going as Jenny and Forest Gump instead tehehe 🍫💝🏓🕊️✌️! This is our first Halloween in our new house so I’m super pumped to decorate our yard (to do list item for this weekend) and pass out candy! Yay!
